I would like to introduce Lawrence Madsen, critically acclaimed Executive Chef who brings over a dozen years of food service operations experience to BirchStreet, including banqueting, catering, and award winning fine dining and restaurant operations.
Lawrence will work with our customers to assist in the implementation of our latest offering–BirchStreet’s advanced Recipe Management Application. He will also help shape the future of this application to assure it remains the most advanced and innovative enterprise recipe and food cost management system available.
Trained at the California Culinary Academy in San Francisco, Lawrence also serves as a recurring judge at the Laguna Culinary Institutes’ various competitions.
During his career, Lawrence has been known to have personally cooked for and served A-list celebrities. His clients have included: Julia Child (a favorite experience of his), Billy Joe Armstrong (Green Day), Bruce Springsteen, Marilyn McCoo and Billy Davis, Jr. (The 5th Dimension), Kenny Loggins, The Nitty Gritty Dirt Band, Ray Manzarek and Robby Krieger (The Doors), Al Jarreau, Colin Hay (Men At Work) and Randy Newman.
“Cooking for Julia Child was my absolute favorite experience as a chef,” said Lawrence when we chatted about meeting the culinary legend. “She was getting her name on the walk of fame at the California Culinary Academy in San Francisco and they picked me to cook for her. I didn’t realize who I was cooking for, but when I came out there she was. I sat down and talked to her. There was a long line of people trying to get her autograph and I didn’t have anything for her to sign except for my chef hat. It was unforgettable.”
While Lawrence served as Executive Chef at Proud Mary’s Restaurant in Dana Point, California, dinner service was Open Table’s third highest rated seafood restaurant in Orange County in 2009.
